ll riccio di mare è uno degli abitanti del mare più belli da vedere e più buoni da mangiare. Molto a rischio in alcune zone del Mediterraneo, di ricci di mare nel nostro bacino ne esistono diversi: riccio regina (Sphaerechinus granularis), riccio maschio (Arbacia lixula), riccio melone (Echinus acutus), riccio femmina (Paracentrotus lividus), riccio saetta (Stylocidaris affinis), riccio diadema (Centrostephanus longispinus), riccio di sabbia (Echinocardium spp.) e tanti altri. Tutte le specie elencate sono commestibili nessuna è velenosa, ma di questi soltanto il riccio regina e il riccio femmina sono comunemente consumati sulle nostre tavole.
Spesso si sente dire, soprattutto da pescatori, che i ricci di mare commestibili sono quelli di sesso femminile, riconoscibili per il colore più chiaro rispetto ai maschi, che hanno in genere spine completamente nere. In realtà la situazione è diversa: quelli che vengono chiamati “ricci maschi“e “ricci femmina” appartengono semplicemente a due specie distinte; tutte le specie di riccio di mare sono a sessi separati quindi abbiamo maschi e femmine per ciascuna specie, con l’unico problema che non presentano dimorfismo sessuale ovvero è impossibile distinguerli morfologicamente dall’esterno.
Ciò che ha generato confusione è una rilevante differenza fra le due specie a livello di organi interni: Paracentrotus lividus, sia maschio che femmina, possiede gonadi (gli organi riproduttivi) di dimensioni molto maggiori rispetto ad Arbacia lixula, e in passato ciò ha indotto a pensare che si trattasse di un’unica specie, di cui gli esemplari con le gonadi più grandi fossero le femmine, mentre quelli con gli organi riproduttivi di dimensioni minori fossero i maschi. Da questo equivoco è nata anche la convinzione che in cucina si utilizzino le uova di riccio, mentre ciò che si usa sono indistintamente le gonadi maschili e femminili di una sola specie.
La pesca del riccio da parte dell’uomo è una pratica antichissima, e ancora oggi è molto in auge, al punto da essere diventata parte integrante dell’equilibrio naturale di alcuni ambienti. I sequestri ormai riguardano tutta l’Italia: i ricci di mare sono diventati merce preziosa che innesca una corsa all’oro e alimenta l’illegalità.
Con episodi anche violenti: un servizio de “Le Iene” di Italia 1, ha raccontato il lavoro degli attivisti di Sea Shepherd sul territorio siracusano, per combattere la pesca di frodo nelle acque dell’area marina protetta del Plemmirio. Un vero e proprio business che mette a rischio la sopravvivenza delle specie marine, soprattutto quella del riccio di mare (vedi il servizio de Le Iene di Italia 1 sul Business dell’Estinzione).
D’altronde se per un piatto di spaghetti con la polpa di riccio i buongustai sono disposti a pagare cifre notevoli è ovvio che siano diventati un prodotto sempre più ricercato. Per questo, accanto all’attività autorizzata, è aumentato il fenomeno della pesca di frodo che contribuisce a rovinare la posidonia, tappeto erboso sottomarino indispensabile alla riproduzione dei ricci.
Così, da un lato scattano divieti e limitazioni per salvaguardare il mare, dall’altro si fanno sentire le ragioni dei pescatori (regolari) che contestano il fermo biologico (previsto a maggio e a giugno su base nazionale e fino a settembre in alcune regioni) deciso, sostengono, sulla base di dati sbagliati. Tutto questo mentre la Guardia costiera ha aumentato i controlli. La raccolta di esemplari sotto misura comporta anche una denuncia penale. La taglia minima di cattura, infatti, non deve essere inferiore a 7 centimetri di diametro totale, compresi gli aculei.
