In media ogni italiano getta nell’immondizia 65 chili di cibo all’anno. Ma chiunque può dare un piccolo contributo, a partire dalla vita di tutti i giorni.
1. Prima di comprare fai la lista della spesa
Sembra una cosa ovvia, ma spesso non accade e si rischia di comprare il superfluo, in termini di quantità di uno stesso prodotto (se servono due arance, perché comprarne dieci?) che di varietà: troppe volte si entra in un supermercato per acquistare un paio di prodotti e se ne esce con il carrello pieno. Accade perché non si hanno le idee chiare su cosa si cucinerà. Se manca la pianificazione si compra un po’ di tutto, attirati magari dal packaging. E se si acquistano prodotti che non servono è probabile che faranno una brutta fine.
2. Quanto più possibile scegli prodotti freschi e di stagione
È più probabile che siano di un territorio di prossimità, che quindi abbiano viaggiato meno. E, cosa importante, che non siano cresciuti forzosamente, ma arrivino da un’area vocata nel periodo dell’anno più propizio. Saranno dunque più rispettosi della natura e anche più saporiti.
3. Fai attenzione all’etichetta: controlla sempre la data di scadenza
Se il prodotto messo nel carrello ha una scadenza troppo ravvicinata dovrà essere consumato presto, con maggiori possibilità di finire nella spazzatura se non si è previsto di mangiarlo a breve.
4. Attenzione agli acquisti impulsivi di prodotti deperibili. Non sempre ne hai bisogno
La regola è collegata alle precedenti. Se l’acquisto di prodotti superflui è già uno spreco, il problema aumenta se si tratta di prodotti che per natura hanno uno shelf life molto breve.
5. In frigorifero metti davanti i cibi che scadono prima
Un po’ come avviene sugli scaffali e i banconi frigo dei negozi, altrettanto dovremmo fare a casa. Posizionare gli alimenti in ordine di deperibilità, in modo che sia la data di scadenza stessa a suggerire una priorità di consumo.
6. Quando cucini, prepara solo quanto puoi consumare
Inutile, se si vive in due, preparare cibo per un esercito, sperando magari di mangiarlo nei giorni seguenti. Sappiamo che (spesso) non accadrà. La regola, peraltro, è idealmente collegata alla numero 1 e può dipendere dalla pianificazione della spesa.
7. Non buttare avanzi e scarti alimentari. Puoi realizzare nuove ricette
Sempre di più blog, libri, programmi tv e siti (per esempio molto interessante quello di Lisa Casali esperta di ecocucina) aiutano a utilizzare in ricette gustose ciò che apparentemente sembrerebbe uno scarto. I torsoli del cavolo, per esempio, i gambi dei carciofi, le bucce delle arance. Basta cercare i consigli giusti per limitare sempre più lo scarto. Ciò che avanza, poi, può avere nuova vita: dalla pasta del giorno prima che può diventare una frittata, il riso può diventare “al salto”, col pane vecchio si può ottenere il pan grattato o si possono fare dei dolci o, ammollato, delle polpette, le verdure bollite possono diventare puree.
8. Hai acquistato troppo cibo? Dividilo con parenti e amici
Non siamo più abituati a bussare al vicino di casa, ma potrebbe diventare una sana abitudine. Yogurt, frutta, salumi confezionati: ciò che sappiamo non poter consumare in tempo utile, può magari far comodo a qualcuno che conosciamo.
9. Al ristorante, se avanza cibo, chiedi un contenitore per portarlo via
Basta superare un po’ di imbarazzo iniziale per capire che il doggy bag è la scelta giusta. Si tratta di cibo che è stato coltivato/allevato/pescato da qualcuno, acquistato dal ristoratore, cucinato e di nuovo acquistato dal cliente del ristorante. Non solo non c’è niente di male a portarlo via, ma si aiuta l’ambiente e l’economia familiare. All’estero è prassi normale. Impariamo a pensare che sia “cool”.
10. Usa la tecnologia. Cerca le app che ti aiutano a sprecare meno cibo
Bring the food, Last Minute sotto casa, Eco dal Frigo, Puccifrigo, UBO (Una Buona Occasione), myFOODY, Too Good To Go, Karma: sono solo alcuni esempi di applicazioni per tablet e smartphone cone le quali è possibile avere consigli su come usare il cibo in eccesso o trovare punti vendita in cui fanno offerte speciali di prodotti vicini alla scadenza.
