Leggi la scadenza e pensi che le uova debbano essere buttate? Prima effettua uno di questi test… poi scopri come cucinarle.
Prima di tutto i gusci d’uovo sono porosi. Ciò significa che se avete qualcosa con un odore forte nel frigo, le uova prenderanno col tempo sempre di più quel sentore. Quindi se le uova rimangono un paio di settimane in un ambiente maleodorante, anche se non sono andate a male, potrebbero avere un sapore non così piacevole.
Il livello del pH di un albume aumenta (diventa più alcalino) con l’invecchiamento e, montando i bianchi, le uova più vecchie si gonfieranno più velocemente rispetto a quelle fresche. La schiuma, però, collasserà più facilmente.
Ma come capire la differenza tra un uovo fresco e uno andato a male senza fraintendimenti? Il metodo più semplice è un vero e proprio test: è sufficiente immergere un uovo in un contenitore d’acqua, meglio se profondo e trasparente, e osservare il suo comportamento.
Quando è fresco Quindi, se lasciando cadere l’uovo nel recipiente d’acqua questo si poggia sul fondo in orizzontale, allora significa che è freschissimo. Uova così fresche sono ottime da fare fritte o all’occhio di bue.
Non così fresco Se scende, invece, sul fondo inclinandosi leggermente vuol dire che è ancora fresco, ma ha circa una settimana. In questo caso è necessaria una cottura più lunga, come quella delle uova strapazzate.
Al limite Se l’uovo precipita sul fondo ma durante la discesa resta fermo e non si inclina, significa che è al limite della commestibilità. Può essere ancora mangiato ma è necessario cucinarlo immediatamente. In questi casi preparatelo sodo (si pelerà meglio di uno fresco, per via della camera d’aria che col tempo si crea all’interno) in modo da non rischiare di mangiarlo parzialmente crudo.
Quando è andato a male? Senza possibilità è invece l’uovo che immerso in acqua risale e galleggia sulla superficie. In questo caso va buttato.
Il rimedio casalingo per capire la freschezza dell’ingrediente ha fondamenti scientifici: la ragione per cui questo test funziona è che ogni uovo ha una membrana sottile all’interno tra guscio e albume. Questa membrana forma una piccola sacca d’aria che con il tempo si espande creando del vuoto che permette all’uovo di galleggiare.
