All’apparenza acqua, la trasparenza del liquido più naturale. Poi si apre la bottiglietta e in bocca ecco il sapore del caffè, della cola, della birra.
La rinomata mania dei giapponesi per il salutismo sta cambiando il mercato delle bevande e i produttori del Sol Levante fanno arrivare sugli scaffali sempre più bibite che sembrano acqua, ma hanno il gusto di tutt’altro. Ed è questo che i consumatori chiedono al momento: tutta la dolcezza di una soft drink, ma dall’aspetto più innocuo, sano.
Come ha dichiarato al Wall Street Journal Ryo Otsu, creatore di una nuova birra chiara analcolica in vendita da Suntory Holdings Ltd, “in Giappone le persone sentono il bisogno di bevande da gustare senza esitazione e c’è crescente domanda di drink dai colori chiari”.
Anche negli Usa le vendite di acqua aromatizzata in bottiglia sono più che raddoppiate negli ultimi cinque anni. Secondo Euromonitor gli americani bevono circa 2,4 miliardi di litri di acqua aromatizzata all’anno: “questi prodotti sono percepiti come bevande moderne, salutari e fresche” ha spiegato Akari Utsunomiya, analista della società di ricerche di mercato.
“All-Free All-Time” – niente zuccheri, niente alcol, niente grassi, niente colori – sembra il claim che ormai accompagna molte aziende, tra cui la Suntory, fabbrica brassicola, che si sta imponendo sul mercato dopo aver tolto il colore dalla sua birra analcolica, aggiunto l’aroma di lime e aumentato la presenza di anidrite carbonica. Anche il packaging si adegua: l’etichetta della bottiglia di plastica trasparente mostra una spiga di orzo e la scritta “al gusto di birra”.
Alla base della scelta, anche motivi di “reputazione”. Infatti la sia pur già analcolica Suntory dal colore ambrato, non era riuscita a conquistare il target: impiegati e manager ne stavano alla larga, temendo che sul posto di lavoro si potesse pensare che stessero bevendo.
In un mercato molto maturo – ma non ancora saturo – come quello del Sol Levante, i produttori di bevande devono affrontare le forti pressioni di una clientela altamente segmentata, dove non a caso nascono quasi 100 nuovi drink all’anno. Per esempio, la stessa Suntory l’anno scorso ha iniziato a vendere una bevanda trasparente che sa di tè con il latte. Ha avuto successo ed è seguita una di tè alla pesca.
Ma anche la concorrenza non resta a guardare: la Asahi Group Holdings Ltd. lo scorso maggio ha iniziato a vendere un’acqua al latte espresso (solo 60 calorie, ci tengono a dire) chiamato Clear Latte e da pochi giorni anche un un tè verde “matcha” chiaro.
Ci sono voluti 170 prototipi di caffè zero-caffeina e zero grassi per ottenere il gusto giusto, ha dichiarato Yuichi Abiru, vice direttore della divisione acqua di Asahi Soft Drinks. Asahi non voleva che la bevanda avesse un sapore troppo dolce – “la gente potrebbe pensare che non fosse salutare”. Il risultato? Un’acqua col sapore di una tazza di caffè freddo.
Negli Stati Uniti, le bevande limpide sono diventate una moda nei primi anni ’90 con marchi come Clearly Candian, Miller Clear (una birra trasparente) e Crystal Pepsi, la cola incolore che è stata lanciata con talmente tanta enfasi da andare esaurita in poche settimane e conquistare una parodia sul seguitissimo show televisivo “Saturday Night Live”, dove si sono divertiti con un finto spot su un fantomatico Crystal Gravy (una trasparente salsa per carni).
