L’ interesse crescente verso i prodotti a base di latte di capra è dovuto sia al loro gusto inconfondibile, piacevolmente acidulo, sia al loro valore nutrizionale. Il latte di capra, infatti, è particolarmente tollerato e digeribile, oltre che più ricco di calcio e fosforo rispetto a quello vaccino. Per ciò che riguarda il lattosio, il latte di capra ne contiene meno (la differenza è dello 0,6% circa), ma comunque non è adatto a chi soffre di intolleranze, fatte salve diverse specifiche in etichetta. Oltre che consumato tal quale, il latte caprino si presta a molte lavorazioni casearie: da quello intero e fatto fermentare con l’aggiunta di lattobacilli si ottiene uno yogurt dal sapore intenso e dalla consistenza cremosa.
È anche la materia prima per ricotta e decine di formaggi molto diversi tra loro: freschi e molli, oppure semistagionati e stagionati, a pasta dura. Sono prodotti molto radicati nella nostra tradizione e molto noti, in particolare primo sale, tomini e robiola, che possono essere ottenuti anche mescolando il latte di capra con quello vaccino. Anche i caprini venduti al supermercato possono contenere altri tipi di latte: infatti, la legge consente di definire “caprini“anche i prodotti preparati con latte vaccino o misto. Meglio, quindi, verificarlo nella lista degli ingredienti in etichetta, così come si può controllare se è stata aggiunta crema di latte (ossia panna) per rendere il formaggio più dolce e cremoso.
Per ottenere i formaggi caprini di produzione industriale, il latte di capra viene pastorizzato e arricchito con fermenti selezionati e con caglio, liquido o in pasta. La cagliata così ottenuta viene frantumata, fatta sgocciolare, eventualmente stufata e salata. Quindi la pasta viene messa nelle forme e lasciata maturare per 20-35 giorni (nel caso delle caciotte). Per gli stagionati, nella lavorazione si usa più sale e il formaggio resta in celle umide e fredde per un periodo di 2 -8 mesi, secondo la tipologia (fonte: Cucina Moderna).
